Description: Our Stewing Chickens are the bony, meaty portion of the chicken that includes the spine, ribs, and breastbone. While they may not be as popular as other cuts of chicken, they are a flavorful and economical option for cooking a variety of dishes. Chicken backs are particularly well-suited for making rich and flavorful soups and stocks, due to their high collagen content, as well as grilling, roasting, or braising. With a little creativity and experimentation, stewing chickens can be transformed into delicious and satisfying meals.

Cooking Suggestions: To make chicken soup with Stewing Chicken, place them in a large pot with vegetables like onions, carrots, and celery, and cover with water. Simmer for a minimum of 2-3 hours, skimming off any foam that forms on the surface. Remove the chickens from the soup and shred the meat off the bones. Add the shredded meat back to the soup, season to taste and Enjoy!
