Italian Meatball Soup

INGREDIENTS:
1 lb FFF Ground Beef
1 Egg
1/2 Cup Italian Breadcrumbs
1/4 Cup Parmesan Cheese
2 Cloves Garlic

SOUP:
3 Tbsp Olive Oil
1 Onion
1 Cup Celery
1 Cup Sliced Carrots
4 Cloves Garlic
6 Cups Chicken Broth
3 Tbsp Italian Seasoning
Salt and Pepper to taste

Optional:
1 Box of your favorite pasta variant

DIRECTIONS:
1. Mix the Ground Beef and meatball ingredients in a bowl and then roll into meatballs. 
2. In the pot you are using for the soup, brown the outside of the meatballs, then set aside. 
3. Add in the olive oil, then the Onion, Carrots, and Celery and cook until soft. Then add in the Garlic and spices.
4. Add the chicken broth to the pot and slowly bring up to a simmer, then add the meatballs back to the pot. 
5. Cook the pasta separately. When the Soup is done, serve them separately so the pasta does not get soggy.
6. Serve and Enjoy!
